Kuih Talam

Kuih talam is one of those nyonya kuih which is very popular over here. I know I know, we can easily buy this kind of kuih from any vendors but it's still great to experience the process though. There are actually a few versions of kuih talam and this is one of them.

Ingredients for Base :
80gm rice flour
40gm tapioca flour
40gm green bean flour
200gm sugar
500ml water
1/2 tspn lye water/alkaline water
2 tspn pandan paste

- mix in all ingredients and cook over low heat.
- keep stirring constantly untill mixture became thicken.
- pour batter to a 7" oil coated tray and steam for 20 mins.



Ingredients for Coconut Layer :
60gm rice flour
40gm green bean flour
2 tbsp tapioca flour
500ml coconut milk
1 tspn salt

- combine all ingredients and cook over low heat.
- keep stirring constantly untill mixture became thicken.
- pour coconut batter to the base layer and steam for another 20 mins.
- then leave completely cool (about 3 hours) before slicing.
