Millet & Glutinous Rice Citrus Muffin

I don't remember when is the last time I made muffins or cupcakes. But I love trying something new everyday. Lately, I am reading something about gluten-free and have learned a lot from there. Plus, my tummy isn't feeling well these days maybe because of the digesting system. So, planning something gluten-free for myself.

And here's what I did.

Ingredients :

1 cup glutinous rice flour
1 cup plain rice flour
1/2 cup millet flour
4 tbsp sugar (omit this if you're using bottle juice)
1 tbsp baking powder
1/2 tspn salt
1 egg, lightly beaten
1 cup fresh key lime juice (or any juices)
1/4 cup honey
1/4 cup corn oil/olive oil
1/2 cup candied/preserved shredded nutmeg


Method :
(1) combine all dry ingredients (except nutmeg) into a big mixing bowl.
(2) stir in the wet ingredients and mix untill well combined.
(3) add in candied nutmeg and mix well.
(4) pour batter to cupcake tray lined with paper cups.
(5) bake at 180'c for about 20 mins.
(6) leave cool before serving.

Millet was first introduced to me by Divina @ Sense & Serendipity. Divina is now teaching at the International Culinary Art Academy of Cebu, Philippine. Since then, I have started taking boiled rice form millet. They are so tasty and aromatic. I even used millet in my Chinese Rice Dumpling. Simply yummy! And these gluten-free millet muffins look terrific as well and tasted extreme wonderful because of the key lime juice I've added in. Plus the addition of nutmeg.... they are my superstar! Hope you guys will like it too.
