Sweet Potato & Cardamom Ice Cream

I just can't wait to make some homemade ice-cream because of the heaty wave over here. You won't even believe it if I tell you that I am sweaty wet from morning till night for almost two weeks time now! Hopefully, I lost a few pounds! hehe... Ice-cream sounds great but I don't have an ice-cream maker! SO WHAT!? I can still make some ice-cream without the machine! I actually have a very interesting ice-cream recipe to show you today, which I think I've never seen this flavour at any ice-cream counter so far. Have any of you tried this flavour before??? Hopefully, it turns out great! And here we go.

Ingredients :

400gm mashed sweet potatoes/kumara
500ml milk
1/4 cup brown sugar
1-1/2 tspn ground cardamom
400gm sweetened condensed milk
300ml thickened cream

Method :

- combine milk, cardamom and sugar in a sauce pot
- simmer the mixture untill sugar dissolved (without boiling), then leave to cool.
- blend mashed sweet potatoes & the milk mixture together untill smooth.
- stir in condensed milk and mix well.
- pour mixture to a lamington pan, freeze almost set.
- chop ice-cream roughly, beat with cream n a large bowl untill smooth.
- finally, pour mixture into loaf pan and freeze untill firm.
- and serve.


Oh..... I've difficulties taking these few shots! The ice-cream actually melts real fast due to the extreme warm room temperature. Hey, guess what? This ice-cream flavour is so refreshing and smooth. SEE... you can still make ice-cream without an ice-cream maker! Yahoooo..... SO ladies, just erase the ice-cream maker from your budget list! hehe.... I definitely will make some more but I'll try taro/yam next round. Enjoy and have fun!
