Liege Waffle

It has been a hectic week! Luckily, I still have time to make myself some delicious breakfast. I've seen this kind of waffle pretty often at the supermarket, under frozen food counter. At the beginning, I thought it was just a common waffle. Well, it does look like one ! Liege waffle is actually made of yeasted dough unlike those common pancake or waffle which is using baking powder. The texture is dense but I just love the way it is.

And here's the recipe which is adapted from The Dutch Baker's Daughter.

Ingredients :
2-1/4 tspn yeast
1/3 cup lukewarm water
1-1/2 tspn sugar
2 cups flour
1 tspn vanilla powder
1/4 tspn salt
3 eggs, lightly beaten
200gm melted butter
1 tspn vanilla extract
*1/2 cup sugar (add in 10 mins just before ironing)

Method :
(1) combine yeast, sugar and water, leave aside for 10 mins.
(2) then mix together flour, salt, melted butter, eggs, vanilla and yeast mixture; stir till well combined.
(3) leave to rest for an hour or untill well proved.

(4) finally, stir in sugar and mix well.
(5) now, you can start ironing the yeasted batter untill brown.

I normally will double up the recipe and then keep half of the cooked waffle frozen. Defrost them at anytime I want and serve with ice-cream or make sandwiches out of it. If not mistaken, Liege waffle burger is pretty popular at one of the restaurant in Vancouver.

  8. I'm not familiar with this waffle Kristy. How interesting that it is made with yeast, which would explain why it is to fluffy. It's such fun to learn new things about foods.

  16. Kristly this waffle looks interesting. I just got a waffle maker and have been researching different recipes. I first made some pumpkin waffles (my daughter's request) that didn't turn out so well. I think I'm a little hesitant to try again, but I will. I have seen some that call for yeast, and some with whipped egg whites folded in and many other variations. This one does look good, maybe I'll try it, and drizzle a little honey over it! YUM!

    Lyndz : pumpkin waffle! I think mashed pumpkin should get along with yeasted dough very well. You should try it again. Oh, is there egg white version as well! That's cool. I'll check that out.

    Hayley : Those selling at the supermarket outlet is different from this kind of waffle. Those are common waffle made of baking powder, tastes like pancake and this one is made with yeast, taste like bread & pancake at the same time. Maybe you should try it some day. :o)

  27. Hi I ate this at Belgium, really delicious, and 1st time I saw the yeast mixture. After mixed ingredients, I notice don't have waffle maker, so I use sandwiches maker.
    Question: Yeast mixture is not as firm as yours, a bit soft? after proved notice in the bowl of mixture a lot of butter oil? is it over proved more than 2 hrs.

    Welcome to my little space. Emm... you're having problem with your Belgium waffle! Actually, there's nothing wrong at all with your dough. Btw, I'm not sure which recipe are you using because some yeasted waffle do add in liquid like milk. While mine is without any milk. So, it's not too runny.
    Secondly, it's OK if the yeasted dough is over proved for one or two more hours. It's best to keep them chilled if you're unable to iron it in time, the next time. :o)
    Or maybe you can try my recipe and compare the difference. Wish you luck!
