Quickie Rice Cooker Salted Chicken 简单电饭锅盐焗鸡
I made the famous Ipoh salt baked chicken, Beggar chicken & Eight treasure chicken, some reader may say the recipe is a bit tedious. Now, I am also working on an easy salted chicken recipe with my rice cooker which is perfect for all working mothers. Please read on for more.
You can get this ready mixed powder at any shopping mall or wet market too.
Ingredients :
one free range chicken about 1.8kg (kampung chicken)
3 TB ' shao xing' wine
2 tspn 'tang gui' powder or Angelica root powder
1 tspn salt
1/2 tspn white pepper powder
1-1/2 TB ready mixed salted chicken powder
1 large onion, halved (can replace it with spring onion)
2 inches ginger, crushed
Method :
(1) combine tang gui powder, salt, pepper & ready mixed powder then mixed well.
(2) wash the chicken thoroughly then pad dry and rub mixture all over the chicken included the inner core. Next, set aside for at least an hour.
(3) finally, place marinated chicken to rice cooker with onion & ginger on bottom. Now, only pour shao xing wine into chicken core.
(4) switch on rice cooker and let to cook for at least 45 minutes. Some rice cooker may need more than that, about 60 minutes. However, make sure to turn the chicken to another way round while half way through, to get the nice brown colour.
The chicken meat should looks like going to tear apart and this means the meat is extreme juicy and tender, which is GOOD .... really really good ! Hope you guys will love it too.
