Cempedak Butter Cake ~ The Healthy Way


Here's another famous local fruit I wanted to introduce to you today, cempedak ! The scientific name called as artocarpus integer where there's another fruit which looks quick the same called as artocarpus heterophyllus or 'Buah Nangka' in Malay. And most of us would called them as Jackfruit. They look quite alike but they actually taste so much different. Cempedak has such irresistible aroma which is more fragrant compare to Nangka. And cempedak fritter is widely sold all around the corner as one of the local street food. Recently, I received some cempedak from a friend nearby and wanting to try it on cakes. The idea is actually inspired by a local TV commercial called 'Ho Chak'. They went to interview the owner of this famous coffee shop in Ipoh selling this cempedak cake for many years already. (click here to see).And it has caught my attention immediately. If not forgetting, Cheah @ No Frills Recipe made this once.

Basically, the following butter cake recipe is adapted to Martha Stewart. Hopefully, she won't be fainted after she saw this version. hehehe..... And also baking the healthy way by using NuStevua sweetener.

Ingredients :
250gm   butter, room temperature
1-1/2 cup  sugar (substitute with 18 tspn NuStevia~Tagatose)
1/2 tspn  salt
4 eggs
3 cups  all purpose flour
1 TB  baking powder
1 cup  full cream milk
1 tspn  NuStevia Flavoured Vanilla
400gm  cempedak flesh, cut small

Method :
(1) combine flour & baking powder into a bowl and mix well, set aside.
(2) beat butter, sugar & salt till fluffy.
(3) then add in eggs one at a time and beat till well mixed.
(4) now, alternately stir flour & milk into butter mixture till everything well combined.
(5) finally, throw in all the cempedak flesh and mix well.
(6) divide batter into two portions and place to separate 3x3x9" tray, lined with parchment paper.
(7) bake at preheated oven 175'C for about 55mins to an hour or till tester came out clean.
(8) best to leave cool before slicing.

I sent out one loaf to my neighbour and they're totally fascinated by this special flavour. It's something new to them and to me too. Most probably, I will be making this for the coming Chinese New Year as a gift instead of cookies. :o)

Quickie Sushi Spring Roll

Hi Everyone ! Gosh...life has been keeping me extremely busy and just got my computer back from the shop. Thank goodness it's still in good shape and no need to change any part. Hopefully, I still manage to make out a few more posting before end of  January. Well, for the past couple of days....I was kind of free after sending out my computer to repair and started housekeeping. No fun at all..... a lot of cleaning, brushing, mopping to do. And food will definitely keep us motivate under this kind of situation. You know what I mean ! hahaha......... For a quick snack, I've made this healthy spring roll to enjoy.

Here's what we need for this quickie delicious rolls.

Ingredients :
4 large Nori sheets
4 large Spring roll sheets (mine is small ones)
1 carrot, julienned
1 small jicama, julienned
1 cup  plain cornflake, roughly crashed
some mayonnaise

Method :
Firstly, line spring roll sheet over Nori sheet then place in carrot, jicama and cornflake. And squeeze on mayo. Finally, roll it up like a swiss roll and divide into four portions. Serve it immediately.

Absolutely....YUM..... YUmmm...... YUmmmmm. Felt like eating some kind of salad where you have natural vegetable sweetness and a little of saltiness & crunchiness in between and absolutely adore the seaweed flavour. Think you would love it too.

Confinement Delight~Steamed Ginger Egg Custard With NuNaturals & A Giveaway


HeLLo HeLLo everyone! My first post on 2013 and again I wanted to start with a healthy way. Before end of 2012,  I was lucky enough to be invited to sample this healthy product from NuNaturals. I received the package just two days after Christmas. Its such a joy to be able to try something good and healthy during this special season. I am extremely excited about it cause I have heard of Stevia for a very long time and I even tried the natural leaves myself as well. Since time is limited, I want to try something simple and quick and of coz, delicious at the same time by using NuStevia. Actually, my neighbour's daughter just gave birth to a baby girl not long ago which reminded me of the awesome steamed ginger egg custard which my aunt used to make during my cousin's confinement. Without wasting any longer, I quickly put everything together with one of the NuNaturals sweetener product. So here we go guys!

Ingredients :
2 eggs
100ml  full cream milk
70ml    water
1 TB  fresh ginger juice (from 2" knob ginger)
2 pkts   NuStevia sweetener powder

Method :
(1) beat together all ingredients till well mixed.
(2) pour mixture to two(2) ramekin or cups and steam at preheated steamer for about 10 mins over low heat or till center set.
(3) best to serve hot.

*some raw brown sugar for topping.

The custard turned out really smooth and creamy. And the sweetness just perfect. As for additional flavouring, I even top it with raw brown sugar as requested by my kids. It was so so so yummy & aromatic.
