Sweet & Savoury Food Cake @ 海苔丝芙蓉蛋糕
There are plenty of leftover egg white after making mooncake last month. And finally, found a good way to use them up. I know there are whole lot more egg white recipes out there but I've chosen this. I really want to bake something less stressful and easy to handle. I'm glad I found the cake recipe from some Chinese website and it turns out just wonderful. The cake became so fancy after adding in a little bit of everything which mostly are from the leftover.
Ingredients :
(A)
100ml milk
65ml corn oil
55gm egg white
120gm cake flour / all purpose flour
a pinch of salt
(B)
220gm egg white
4 TB sugar
Ingredients for topping :
1/2 cup sliced spring onion
1 cup seaweed floss / meat floss
Method :
(1) whisk ingredients (B) till stiffed & foamy. Set aside.
(2) beat ingredients (A) till fluffy & well cooperated
(3) hand stir ingredients (B) into (A) in 3 batches till everything well cooperated. Do not beat the ingredients.
(4) then spread batter to a 9x12" baking tray lined with parchment paper. Always rub bottom tray with cooking oil or melted butter before lined in papers.
(5) finally, sprinkle on sliced spring onion & seaweed floss and bake at preheated oven 165'C for about 25 minutes or till tester came out clean.
(6) once its done, cooled for 10 minutes before removing paper from cake.
(7) now, divide cake into 2 portions and spread one portion of cake with mayonnaise then top the other portion of cake. (as picture shown below)
The cake will look something shown in this picture. Then sliced all corner of the cake to make it even.
Finally, cut the cake into small bite size and serve.
The texture of this cake is really silky smooth & spongy. I love the simple combination in between. Absolutely tempting ! Hope you guys will love it too. Enjoy & have a great weekend everyone.
