Delicious Taro Mixed Rice

This is one of the many popular dishes served by the people from southern part of Malaysia. Its another way how Asian cooked and served the rice with. In older days, many from the poor enjoy cooking rice with all kinds of vegetables. And 'da cai' (from mustard green family), pumpkin & sweet potatoes which are mostly used. But today, this simple dish has been recreated into something expensive & exotic.And here's what I want to share with you today. Hope you will like it too. Enjoy !

Ingredients :
2-1/3 cups  water
1-1/2 cup  white rice
1/2 cup   glutinous rice
300gm  taro, cubed & then fried till cooked
50gm    dried shrimp, soaked
50gm    dried oyster, soaked
1 inch ginger, julienned
3  shallots , sliced

Seasoning :
1 TB  dark soy sauce (add more if you prefer darker)
2 TB  light soy sauce
1/3 tspn  salt
1/4 tspn  pepper
1/2 tspn  vegetables granule

For Topping : 100gm salted fish (rinsed & fried till golden brown)


Method :
(1) rinsed & drained both rice and set aside for 30 minutes.
(2) preheat wok/frying pan with 1/3 cup cooking oil, saute ginger, shallot & dried shrimp till fragrant.
(3) next, stir in dried oyster, both rice and all the seasoning, cook everything till dry & well cooperated over low heat.
(4) then transfer everything into rice cooker included the fried taro and water, let it cook till done.
(5) once its ready, serve rice with salted fish.

I really enjoyed using mixed rice in this type of cooking. It gives such a fantastic texture to the rice itself and it definitely much flavourful with the additional of dried oysters. So, are you feeling hungry now ???

Sweet & Savoury Food Cake @ 海苔丝芙蓉蛋糕

There are plenty of leftover egg white after making mooncake last month. And finally, found a good way to use them up. I know there are whole lot more egg white recipes out there but I've chosen this. I really want to bake something less stressful and easy to handle. I'm glad I found the cake recipe from some Chinese website and it turns out just wonderful. The cake became so fancy after adding in a little bit of everything which mostly are from the leftover.

Ingredients :
(A)
100ml  milk
65ml    corn oil
55gm  egg white
120gm  cake flour / all purpose flour
a pinch of salt

(B)
220gm   egg white
4 TB  sugar

Ingredients for topping :
1/2 cup sliced spring onion
1 cup  seaweed floss / meat floss





Method :
(1) whisk ingredients (B) till stiffed & foamy. Set aside.
(2) beat ingredients (A) till fluffy & well cooperated
(3) hand stir ingredients (B) into (A) in 3 batches till everything well cooperated. Do not beat the ingredients.
(4) then spread batter to a 9x12" baking tray lined with parchment paper. Always rub bottom tray with cooking oil or melted butter before lined in papers.
(5) finally, sprinkle on sliced spring onion & seaweed floss and bake at preheated oven 165'C for about 25 minutes or till tester came out clean.
(6) once its done, cooled for 10 minutes before removing paper from cake.
(7) now, divide cake into 2 portions and spread one portion of cake with mayonnaise then top the other portion of cake. (as picture shown below)

The cake will look something shown in this picture. Then sliced all corner of the cake to make it even.

Finally, cut the cake into small bite size and serve.

The texture of this cake is really silky smooth & spongy. I love the simple combination in between. Absolutely tempting ! Hope you guys will love it too. Enjoy & have a great weekend everyone.

Flaky Pandan Croissant @ 亚洲风味香兰牛角酥面包

Did you see that ??? Gosh, such a beauty. Love the fluffy look of the layers and the aroma is stunning ! Definitely another winner after the green tea danish loaf project.

I actually made both croissant as well as danish loaf. They look awesome ! I double up the original recipe which will gives you two 4x8" danish loaves or 8 large croissants or 16 medium size croissants. So, here's what I did.

Ingredients for croissant dough :
230gm   bread flour
80gm     cake flour
16gm    milk powder
1/2 tspn  salt
1-1/2 TB  sugar
1 tspn  instant yeast
2 small eggs (about 85gm)
1 tspn  pandan paste
40ml   milk
80ml   water
40gm  cold butter, chopped

*230gm  cold butter block 5 x 5" square

Egg glazing : 1 egg yolk mix with 1 tspn milk

Method :
(1) combine all ingredients (except butter)  into a big bowl and stir to form a soft dough then add in butter continue kneading till everything well cooperated.
(2) shape dough into a ball then keep it into a plastic bag and slightly flatten it  Keep refrigerated for overnight or at least for 8 hours.
(3) for butter, weight the butter then cut into 6 portions, arrange butter into a small plastic bag which about 4 to 5" big then press to flatten it. Keep refrigerated till set.
(4) for the folding & laminating process, please refer here.
(5) flatten dough with the size about 10x20" then divide into 4 equal portions. Then cut each portions into two as picture shown above to form a triangle shape.And make a small cut to mark the center on each triangle.

. (6) pick one triangle dough and gently pull to stretch the dough with your other hand then roll up dough from the flat end to the pointing end to form the croissant. Finally, let to proof for 2 hours on the baking tray lined with parchment paper.

(7) when its ready, brush the top with egg glazing then bake at preheated oven 180-185'C for about 20 minutes or till golden brown. Of course, danish loaf needs long baking time compare to croissant.

See, how it turns out ! Fluffy.... puffy.... flaky..... Oh boy, just can't wait to take a bite !

Green Tea Danish Loaf @ 亚洲风味丹麦绿茶面包

This is one of my favourite baking project other than pastry making. I really enjoy the laminating work out throughout the process cause there is always HOPE. Something that you've been looking forward to turn out by the end of the project ! This round I have to thanks Anne @ My Bare Cupboard for sharing such delicious recipe. See Anne, I told you I'm going to make them. LOL...

I love how the gorgeous green turns up. Looks simply amazing !

Ingredients for danish dough : (for two 4x8" tray)
230gm   bread flour
80gm     cake flour
16gm    milk powder
16gm   green tea powder
1/2 tspn  salt
1-1/2 TB  sugar
1 tspn  instant yeast
2 small eggs (about 90gm)
40ml   milk
70ml   water
40gm  cold butter, chopped

*230gm  butter
Egg glazing : 1 egg yolk mix with 1 tspn milk

Method :
(1) combine all ingredients (except butter)  into a big bowl and stir to form a soft dough then add in butter continue kneading till everything well cooperated.
(2) shape dough into a ball then keep it into a plastic bag and slightly flatten it  Keep refrigerated for overnight or at least for 8 hours.
(3) for butter, weight the butter then cut into 6 portions, arrange butter into a small plastic bag which about 4 to 5" big then press to flatten into equal square size. Keep refrigerated till set.

(4) now, flatten green tea dough by rolling it into the size slightly bigger than the butter. Next, roll & flatten even more for all corners which the center is still thick.

(5) fold all corners of the green tea dough to cover butter completely. Then flatten it by rolling out into a long rectangle shape for about 12x30".

(6) now, instead of doing the 3 fold I did the 4 folding by placing both end of dough facing the center, as picture shown the above. Then make another folding by placing one overlap the other, as picture shown below. Looking like a 4 layers stacked dough.

(7) keep dough freeze for 20 minutes after each turn, meaning do the 4 folding for 3 times and keep dough freeze after each turn. This will helps to generate better layers. Next, rotate dough in 90 degrees so that the opening is facing the left or the right and then repeating the same process once and again freeze it for the 2nd time. Try to press dough by rolling pin to flatten it before rolling it out after each freeze.

(8) now for final rolling, flatten dough into 4x16" rectangle shape which is twice the size of the loaf tray. Then cut into 4 strips and braid the strips of dough.

(9) place both end of the braided dough to the middle then put it into the greased tin up side down.

(9)  keep the tray cover with a clean damp towel or plastic sheet and let to prove for 4-5 hours, or till fill up about 90% of the tray.

It will look something like this to.....

THIS......after 4 hours. Yes, I only rest them for 4 hours ! Maybe will let them rest an extra hour the next time I made them. And finally, brush the top with egg glazing then bake at preheated oven 180'C for about 30 minutes or till golden brown.

And here it is.... something that I have been waiting for after all those tedious work. Absolutely satisfying ! And don't forget about the giveaway guys. Good luck !

Seaweed Floss In Cocoa Teochew Baked Pastry And A Giveaway

Yes, I never had enough ! I am totally obsessed with Chinese pastry making lately. Since I still have plenty of leftover ingredients from the previous mooncake project. And I am going for more pastry making.

Its actually been a long long time since I made this baked version pastry. And I am loving this even more now !  I nearly gave up this recipe and cancelled the project because out of cocoa powder. Suddenly, something came up. Yes, I found this ! The NuStevia cocoa syrup.

This vegetarian seaweed meat floss is available at any vegetarian shop. It cost around RM11.00 per packet (300gm).



Ingredients for pastry dough :
Dough (A)
150gm  all purpose flour
10gm  cocoa powder (I omitted it)
50gm  shortening
40ml  NuStevia Cocoa Syrup
55ml   water

Dough (B)
180gm  all purpose flour
90gm  shortening

Fillings : 
600gm  pandan mung bean paste
1/2 cup  seaweed meat floss (or chicken floss)

Method :
(1) for dough (A),  rub shortening with flour till cooperated then stir in water and cocoa syrup till soft dough is form then leave to rest for 30 minutes. Finally, divide into 10 portion (about 30gm each),
(2) for dough (B), mix ingredients together to form a soft dough then divide into 10 portion (about 25gm each).
(3) now, wrap ingredient (B) into (A) and seal well then refer here for the roll process.
(4) next, cut rolled dough into 2 portions each, surface reveals the spiral layer.
(5) flatten the dough by rolling into round shape, then place in one teaspoon of seaweed floss then top with pandan mung bean paste (about 30gm each), seal dough by pushing the the edges to the meeting point & sealed.

Note : No egg glazing is needed.

Finally, bake the prepared pastry at preheated oven 185'C for about 20 minutes or till nice & brown.

These are the baked pastry which looks just nice & cute. The pastry skin will turned crispy after cooled.

The combination between the sweet & salty is simply amazing.
