Date & Apricot Ice Cream Soda Quick Loaf

During this fasting season, Muslims are advice to take more dates before they start the day. Why? Because dates contain of sugar, a concentrated source of energy. This will help the body to start its digestive process and to deal with the fasting day. Dates are also digestible which gives time to metabolize in the body. Plus, the nutrients in dates can help to protect the stomach and intestinal tract from parasites and bacteria. And dates are also high in dietary fiber which helps to prevent constipation during the fasting month. In addition, they are sodium, fat and cholesterol free. So, I ended up transform the beer bread into a 'HALAL' bread with these fabulous fruits.

And here's what I did.

Ingredients :
2 cups all purpose flour
1 cup whole wheat flour
1/3 cup brown sugar
1 tspn salt
4-1/2 tspn baking powder
1 tspn ginger powder
1 tspn nutmeg powder
3/4 cup butter, melted
12oz ice cream soda soft drinks
1 cup dates, quartered
1/2 cup dried apricot, quartered

Method :
- combine flour, sugar, salt, baking powder and spices into a mixing bowl.
- stir in melted butter and ice cream soda and mix untill well combined.
- add in dates & apricot and stir well.
- place batter into a 9x4" baking tray.

Finally, bake at preheated oven at 175'c for about an hour. Leave completely cool before slicing.
Now, all I need is some butter on this bread to start my day! Enjoy and have a nice day.
