Cheesy Ginger Beer Bread

,
*Cough....* I'm in the middle of battle right now! Running nose, cough and muscle pain. Imagine I'm baking and cooking with all those tissues stuffing to my nose. haha.... And yet still managed to write a few words before I get some rest. It's good that you can still manage to bake eventhough you're sick. All you need is just a nice & simple recipe.

Ingredients :

2 cups all purpose flour
1 cup whole wheat four
1/3 cup brown sugar
4-1/2 tspn baking powder
1 tspn salt
1 tspn ginger powder
1 cup shredded cheddar cheese
2 tbsp butter melted
12oz beer (one can)
1/4 cup mixed nuts & seeds
*
*Recipe adapted from Annie's Eat.
*

Method :

- combine all the dry ingredients in a big bowl.
- stir in beer and melted butter, mix well.
- pour batter to a 4x9" tray and sprinkle on the mixed nut & seeds.
- bake at 175'C for about 55-60mins.
- cool completely before slicing.
*
Just take a look at those melting cheese in the bread. Hmm..mm.... make me smile. So, enjoy & I'll be back SOON!

Rebecca : Way to go, dear! You're great in making bread.

Barbara : Half rotten but much better now after sweating! Glad you like the beer bread too.

    Pranis : Thank you!

    Jay : Thanks!

Juliana : Thank you & glad you like it as well.

Lynd : Thanks! I'm much better today! It's good working out in the kitchen and sweating makes me feel great. I just taken some ice-cream...that was so cool! haha... My nose & tongue sucks..... not functioning well due to the flu! Can't taste or smell anything except ice-cream! SEE...

Mary : Thank you! I'm much better now.

Claudia : Thank you for your concern! I'm much better now. Will hop over ASAP.

Alison : Yes, I am alright now! I went to bed early last night and have had a good rest. Thank you. ^_^

Peanutts : Of coz, you can try something else instead of beer! I actually about to try it with vanilla coke and see how it turns out. I think any drinks with gas will help, such as 7-up, ice-cream soda etc.

Thank you very much for all your concern. I am very very blessed to have all of you around. I am much better now.

Hope you're all having a wonderful day.

    Best regards, Kristy

  32. Alamak! Sick and you're still baking and posting?? That's what I call "commitment"!!

But please don't be so brave, and take care of yourself. Mums are notorious for taking care of everyone else and ignoring their own needs. Jangan lupa jaga diri baik-baik, ok?

Btw - the cheese and beer loaf looks magnificent - fantastic texture for a quick bread!
