Ayam Golek

As promised, here's the main course! Ayam golek is a very popular delicacy at the southern part of Malaysia and you can easily found this kind of stalls along the road side especially during the fasting season which is coming soon. This is a none spicy but extremely flavourful BBQ/grilled chicken. In Malay, 'ayam' means chicken and 'golek' means turn around/over. So, catch the meaning!

Ingredients :

6 whole chicken leg
300ml coconut milk
2 tbsp brown sugar
salt & pepper to taste

Ground Spices :

8 shallots
5 cloves garlic
3 stalks lemongrass
100gm galangal / blue ginger
1/2 inch ginger
10 bird-eye chilies
2 tspn ground turmeric
1 tspn ground cumin
2 tspn ground fennel

Method :

- marinade chicken with salt & pepper, and leave aside for about an hour.
- combine coconut milk with the ground spices in a pan and simmer over low heat.
- then add in seasoning to your taste and off the heat.

- add in the chicken, leave to marinade and keep refrigerated after cool.
(it's best to leave overnight before used)
- finally, grill the chicken and brush with remaining marinade sauce or'
- bake at 200'C for about an hour or untill brown.

Frankly, I don't buy this kind of grilled chicken often because none of them satisfied me. Maybe it's my own problem! I felt that there's always not enough spices or whatever. Yet, still homemade is the best! hehe.... So, enjoy!

Kechara Salad

Kechara Salad is actually one of the vegetarian dish which originated from Kechara Oasis Vegetarian Restaurant over in Kuala Lumpur, the capital city of Malaysia. Basically, it tastes a little like our Chinese 'Yu Sang'. Mainly because they used plum sauce for the salad dressing. And here's my copycat recipe.

Ingredients :
200gm shredded cabbage/purple cabbage
100gm shredded lettuce
1 large onion
20gm carrot julienne
1/3 cup roasted crashed peanuts & cashew nuts.

Salad Dressing :

5 tbsp plum sauce
4 tbsp lemon juice
1 tspn kumquat extract/oil (or mandarin orange oil)
2 tbsp sugar
a dash of salt to taste
(mix all ingredients untill well combined)

Method :

- place all ingredients except crashed peanuts into a big mixing bowl.
- stir in the salad dressing and mix well.
- and sprinkle the top with crashed nuts just before serving.

This is a delightful & easy to make salad. Less oily which is healthier! Hope you guys will like it too. I have the main course to go along with this. So, watch out for my up coming post. See ya!

Nutty Wholemeal Bread Stick

The other day I was thinking what other bread is best to go along with my cup of coffee, other than the thin layer & crunchy fougasse? Emm.... grissini should be a nice one but a little too plain. Now, what about a little additional flavour on grissini!!!! A little nuts, seeds and dried fruits! So, here's what happened.

Ingredients :

200gm bread flour
100gm wholemeal flour (ATTA flour)
2 tbsp milk powder
100gm milk
1 egg
1/2 tspn salt
1/2 tspn yeast
30gm shortening
3 tbsp black sesame seeds
1 cup crashed roasted mixed nuts
1/3 cup raisins (for additional sweetness, optional)

Method :

- combine all ingredients except sesame seed & mixed nuts in a mixing bowl.
- knead to form a soft dough.
- add in all the mixed nuts & sesame seeds untill well combined.
- let to rest for an hour or untill double in size.




- punch dough to release air and knead till smooth.
- roll flat into rectangle, according to the length as desired.
- cut in stripes about 1/2" in width and then twist the dough.
- line dough to baking tray and let to rest for about 20-30 mins.
- finally, bake at 190'C for 20mins.

Psss.... I actually dipped them into peanut butter and nuttella. Guess, you know what's going to turn out! Yumm....yumm.....yumm.... chewing the bread stick with peanut butter & nuttella! The first thing came to my mind was 'Caution! These are killer sticks and they gonna torture you'. I can't do anything cause food and human mind is like magnetic force. Once negative meets positive ... nothing can stop it!

Homemade Sata @ Grilled Fish In Banana Leaves

Sata is one of the famous delicacy over the east coast of Malaysia. Sata is grilled marinade fish on banana leaves. I have eaten this wonderful treat several years back at Mersing when I was on my way back from my Pulau Pemanggil trip. And thank you Smallkucing for reminding me on my previous post, Sate Lilit Indonesia. I'm glad that I can make my own sata snack at home now.

And here's what I did.

Ingredients :

500gm mackerel fillet, roughly mashed
1 cup shredded coconut/dessicated coconut
10 shallots, thinly sliced
8 cloves garlic, chopped
1 inch fresh ginger, minced
a slice of turmeric leaf, thinly sliced
1 tbsp black peppercorn, crashed
5-6 bird-eye chilies, thinly sliced
1 tspn black pepper powder
2 tspn salt
2 tbsp brown sugar
1 tspn coriander powder
2 tspn paprika powder/chili powder/ flakes
*some banana leaves

Method :

- combine all ingredients together in a big bowl and mix well.




Shape the banana leave into cone shape and then fill with 2 tbsp of the fish mixture. Seal nicely. I've not enough banana leaves so use aluminium foil instead.
Then grill over a charcoal fire or bake at 200'C for about 20-25mins or untill cooked.

From here, you can see clearly the original picture of sata Terengganu. I wonder how did they wrap the leaves so neat and beautifully. Well, mine wasn't that bad at all, right! hehe.... Frankly, sata has a very unique flavour of itself which is still fresh & juicy after cooked.



Normally, they just having this snack plain without any dipping. Since I'm at home... so just make myself an extra treat. A simple spicy and sweet dipping sauce, also suitable for sate lilit! So, enjoy!

Dipping Sauce Ingredients :

2 tbsp soy sweet sauce
1 tbsp chili paste, pickled
(ground/grind together bird-eye chilies, ginger and garlic, stir in lime juice & keep refrigerate)

White Chocolate Cheese Cake

I wonder are you guys out there facing the same blogger problem as I do for the past few days! I have problems entering other blogger site lately. Really frustrating! Or maybe because I haven't had enough cheese cake lately..... haha... what a good reason to make myself bake for something rich. I mean do you guys give reasons to make something deliciously rich for yourself when you're craving desperately? Frankly, this is not a good idea at all.

Ingredients for Base :
115gm butter, melted
170gm digestive biscuit, finely crashed
50gm toasted ground almond
*
- combine all ingredients and mix well, then press mixture to a 8" springform pan.
- keep chill untill set.

Ingredients for Cheese Filling :
500gm cream cheese
80gm sugar
5gm cornflour
2 eggs, lightly beaten
200ml yogurt
70gm white chocolate, cut in pieces
2 tbsp whipping cream

- combine all ingredients (except white chocolate & whipping cream) in a big bowl and beat untill well combined.
- melt white chocolate with whipping cream untill well mixed.
- stir melted chocolate to cream cheese mixture and mix well.
- pour 2/3 of the batter to the prepared biscuit base pan.

Dark Chocolate Mixture :
8gm cocoa powder
1 tspn instant coffee powder
20ml hot water
1/2 tbsp coffee extract

- mix all ingredients together untill dissolved.
- stir the coffee mixture to the 1/3 portion batter and mix untill well combined.
- then dot the coffee mixture in the white mixture.
- swirl a palette knife through the mixtures to create a marbling effect.


Finally, cover the bottom baking tray with aluminium foil. And waterbath bake at 150'c preheated oven for about 1hour & 20 mins or untill it's set. Glaze the cake with marmalade jam.
Leave cool and refrigerate the cake overnight before serving.

* 80gm marmalade jam combine with 3 tbsp water, and heat low heat untill smooth. Allow to cool before glazing.
Oh yes, this should fix my taste bud.... Excuse me, I mean my tummy included my soul & mind! hehehe.... By the way, I think those cake shop selling this for about RM$5.90-RM$6.90 per slice. So, do you think you want to make your own or buy it instead? In the other hand, how often do you make your own cheese cake?

Sate Lilit Indonesia

Sate lilit is one of the famous cuisines in Indonesia and it's also called as Satay Bali. It looks a little different compare to those satay chicken that we commonly eat. Sate lilit is made of seafood and it's spicy. As for me, I prefer to combine both fish paste and ground chicken meat together so that I can make an extra few more sticks. Yet it still as fabulous due to the spices & spicy hot chilies in it.

Ingredients :

200gm homemade fish paste/white fish fillet
200gm ground chicken meat
100gm grated coconut/desiccated coconut
4 bird-eye chilies, roughly chopped
3 shallots, chopped finely
2 tbsp ground fresh ginger
3 kaffier lime leaves, sliced finely (optional)
2 tbsp brown sugar
1 tspn salt
1 tspn cumin powder
1 tspn turmeric powder
1 tspn crashed black peppercorn
1 tbsn vegetarian oyster sauce

* 8-10 lemongrass stalks (to use as skewer)

Method :
- combine all ingredients together and mixed well.




- clean lemongrass stalk and get them trim nicely.
- mould one or two tablespoon of the mixture around a lemongrass stalk.
(as shown as follow)




- pan fried over low heat or grill over a charcoal fire untill golden brown.
- serve warm with turmeric rice or pineapple rice.

This is absolutely a truly satisfaction recipe due to the usage of my homemade fish paste. It gives you the springy and then not too chewy texture in addition with all those fragrant spices. Of course, you can use the white fish fillet or maybe crab meat or prawns or squid but make sure everything is well blended. For better result, roughly flatten the lemongrass head before covering it with the mixture. Hope you guys will like it too! Enjoy.

Cheesy Ginger Beer Bread

*Cough....* I'm in the middle of battle right now! Running nose, cough and muscle pain. Imagine I'm baking and cooking with all those tissues stuffing to my nose. haha.... And yet still managed to write a few words before I get some rest. It's good that you can still manage to bake eventhough you're sick. All you need is just a nice & simple recipe.

Ingredients :

2 cups all purpose flour
1 cup whole wheat four
1/3 cup brown sugar
4-1/2 tspn baking powder
1 tspn salt
1 tspn ginger powder
1 cup shredded cheddar cheese
2 tbsp butter melted
12oz beer (one can)
1/4 cup mixed nuts & seeds

Method :

- combine all the dry ingredients in a big bowl.
- stir in beer and melted butter, mix well.
- pour batter to a 4x9" tray and sprinkle on the mixed nut & seeds.
- bake at 175'C for about 55-60mins.
- cool completely before slicing.
