Gluten Free Basque Burnt Cheese Cake 无麸巴斯克烧焦芝士蛋糕
My first attempt trying out the famous Basque Burnt Cheese Cake. Not brave enough to try it out in my air fryer but will do the next round. My Khind air fryer can fit in a 8" tray perfectly. This Basque cheese cake is actually originated from the Basque country, which is located at the Northern of Spain. This is such a brilliant idea to have this not so perfect looking cheese cake turned into a famous and expensive cheese cake. I think it looks perfectly indulgence and it is indeed yummy and irresistible. Please read on for more.
Here's what I did. (Idea was picked from here & here.)
Ingredients : (8" tray)
500gm cream cheese at room temperature
180gm fine sugar
4 large eggs
1/2 tspn salt
200ml heavy cream
20gm corn flour
Method :
(1) beat cream cheese and sugar till creamy.
(2) add in egg one at a time and beat till well cooperated.
Remarks ; I skipped the vanilla cause I prefer the origin cheese flavour. Still it depends on your own preference.
(3) next, add in heavy cream and salt continue beating till well mixed.
(4) now, fold in corn flour by 3 batches till everything is well combined.
(5) then transfer batter to a 8" baking tray lined with baking paper.
(6) finally, bake at preheated oven 195'C for 30 minutes and then increase to 210'C for another 30 minutes or till the crust turned brown. Leave cake in the oven with door ajar for 10 minutes.
(7) when ready, leave cake cool at room temperature then unmold the cake and keep chilled overnight or at least 4 hours or till set before consuming.
Gosh, the cake smells incredibly good ! Bet you will wallop the whole cake all by yourself. Yeap, you will ! haha..... I am not kidding OK !
