Light Curry Fish With Mixed Vege

Ingredients :
a few slices mackerel fish
150gm long beans, cut in 2" long
2 whole eggplant, cut small
3 tomatoes, quartered
a few fried bean curd puff (optional)
1/2 cup creamer
2 pcs lemon grass, clean & cut
some curry leaves (optional)
some salt to taste
some salt to taste
Curry Paste :
80gm red onion
50gm ginger
4 red chillies
20gm garlic
3 tbsp curry powder
Method :
- blend red onion, ginger, chillies and garlic together.
- preheat wok / frying pan with 1/2 cooking oil.
- stir in the blended mixtures & lemon grass; and simmer untill fragrant.
- add in curry powder and stir till well mix.
- next add in all the vege and stir for 2 mins.
- then pour in water and bring to boil under medium heat.
- finally, add in fish and creamer, cook under medium heat for about 10 mins.
- make sure the fish is not over cook.
- and serve hot.

Off course, you can use any other kinds of fish or fish fillets. Just put in whatever you want and be happy with it! It's your own meal, right?
