Prawn Fritter With Peppermint Dipping

What can we do with all the prawns or shrimps??? Deep fried, sweet and sour, curry, soy sauce, spicy chili, baked or steamed!!!! Lots of choices, right? Whatever the cooking, as long as we serve nice and tasty food on the dining table for our family that is the greatest joy of all ! As a homemaker, I think I am happy enough to watch my family enjoy eating all the food I cooked. And leave No Leftovers.......ha ha !


Ingredients for Prawn Batter :

4 tbsp all purpose flour
1 tbsp tapioca flour /rice flour / glutinous flour
1 tspn baking powder
water, adjustable
(**for 1/2kg prawns)

- combine all ingredients and mix well.
- the batter shouldn't be too thick, just nice and creamy will do.
- marinade prawns with salt, pepper and sesame oil.
- dip prawn into the batter and fry over medium heat untill golden brown.
- keep in the oven under low heat, untill serve.

Ingredients for Peppermint Dipping :
1/2 cup mayonnaise
1 tbsp mustard sauce
1 tbsp chopped peppermint leaves
1 tbsp lemon juice
- blended all ingredients together untill combine.
- and serve.
