Lavender Meringue & Dulce De Leche Square

First of all, I would like to thank Pam @ The Gypsy Chef for sending me a gigantic package of lavender and also an apron. So sweet of her! Pam is a chef. Lots of activities have been going on and recently she organized a cooking trip to France which will be departing on this coming September. The trip is now opened for booking. For further info please click here. So, Pam... this lovely piece of goodies is specially for you. Hope you'll like it!

Ingredients for Chocolate Sponge :
6 large eggs, separated
120gm sugar
95gm cake flour
15gm cocoa powder
1/2tspn instant coffee powder
*one large packet graham crackers/digestive biscuits
Method :
- place biscuits to a 10x13" (or 9x11") tray lined with parchment paper.
- beat egg white and sugar untill foamy & stiff.
- add in egg yolk each at a time and whisk untill well combined.
- stir in dry ingredients slowly and mix well.

- pour batter to cover the biscuits.
- and then bake at 160'c for 30-40mins.

Lavender Meringue :

180gm egg white (or 6 egg white)
187gm sugar
1 tspn ground lavender

* 1/2 cup dulce de leche

Method :

- whisk egg white and sugar untill foamy & stiff.
- stir in ground lavender and mix well.
- spread dulce de leche to the chocolate sponge.

Then cover with meringue. Finally, bake at 220'c untill golden brown.

I only spread a thin layer of dulce de leche which is just nice. And with the addition of lavender, the meringue smell terrific! Hope you guys will enjoy this as much as I do. Have a great weekend everyone!

What a nice package that Pam sent you. Lavender is wonderful, I've had lavender dressing on a dalad with lamb, but never had it this way. Okay first it was coconut that I've seen everywhere, now dulce de leche, and I love both of these and want some now! You guys are killing me here:)

Awesome recipe, I feel like giving it a try! Btw, the Meringue should bake for approximately how long? Or perhaps we really need to stand by the oven to wait until it's golden brown? Thanks!

Place your final bake on the upper shelf. Yes, you need to stand by the oven cause it browns very quick around 5-10mins, depend on your oven temperature. All the best & happy baking!

I read it in some Chinese sites say it's mainly prepared with preferment, red wine, longan, and walnuts. Again, if I have further infor., I will email you. Otherwise I probably would ruin this recipe post. :-)

I love dulce de leche, a traditional sweet from Uruguay where I grew up. I have some (authentic!!) in my fridge and I will make this cake!

You are brilliant to make the meringue with ground lavender. I never thought of it. I'm going to steal the meringue recipe to top my lemon pie. Iam so enjoying your goodies!
