Mayonnaise Roast Chicken

This has been my children's favourite, ever since I started making it a couple months ago. It's a very simple and yet easy to make recipe. You can either use one whole chicken (cut open) or chicken whole legs in this recipe and it's also wonderful for any occasions.

Ingredients :

4 whole chicken legs
salt & pepper to taste
1 tbsp olive oil
1/2 tspn ground rosemary
1 cup mayonnaise/tartar sauce/mustard sauce
1/2 cup breadcrumbs

Method :

- preheat oven at 200'c.
- season to taste with salt, pepper, ground rosemary and oil.
- bake the chicken, skin side down untill cooked for about 45mins.




- then place the chicken skin side up and spread on the sauce as desire.
- coat with breadcrumbs and reduce oven heat to 180'c.
- return the chicken to the oven for another 20-25mins or untill golden brown.

Ta...da.... Chicken is ready to serve!

You can also make your own sauce for the spreading. For me, I've chosen the hassle free sauce! hehe.... Yet, I still think tartar sauce goes pretty good with the chicken. Well, what about you?

I think the mayonaise sounds perfect for chicken this way. Maybe add just a touch of dijon mustard to the mayo! Yum!

Crunchy crust with rich gooey sauce (I think I would love to use tartar sauce)in between, then when you bite deeer into the...mmm...juicy, succulent flesh...a heaven in just one bite.

I never would have thought of that but it's a great idea! I bet adding some roasted garlic to the mayo would be a good time.

What a GREAT idea!!! I've marinated chicken in mayo before but never in a million years would I have thought to prepare it you way. So much easier and less mess.

mayo sounds good. i like to use seasoned yoghurt as well. As for sauce, I like using tomato sauce.... heh
