Poppy Seed Plum Muffin

Muffin always a perfect choice of baking during the busy day, even for busy server hosting managers. Just dump everything you like in and stir to mix, then bake. The best thing was you can have it soon after taken out from the oven while it still hot. I have to thank the specialty shop owner for the poppy seeds! She purposely kept this up for me from last X'mas. How nice of her! And here's what I did.

Ingredients :

1 cup plums, cubed
2 tspn poppy seeds
150gm butter
150gm sugar
250gm all purpose flour
1-1/2 tspn baking soda
100ml milk
3 eggs, beaten

Methods :
- beat butter and sugar together untill fluffy.
- fold in flour, baking soda and milk, mix well.

- then stir in eggs & plum, mix untill combined.
- fill in the muffin cups and bake at 190'c for 25mins.

Fresh from the oven! How lovely!

I had two of these straight away! Sounds like a gimmick! hahaha.... Oh yes, just love it with more ..more ...more butter and jam.

Wow, those are butter sitting atop the muffin? That's a huge dollop I must say. I'll have the muffin without it thanks:D I am sure it's delicious enough with all those plum in it.

Those muffins look delicious.
I wonder if they would be just as good by substituting the milk with Chobani's Pomagranate Greek Yogurt?

This is way too tempting to look at for any length of time. It really looks scrumptious. I'll wager it tastes every bit as good as it looks.

It's always good to have an "in" with the specialty shop owner! hehe! Poppy seeds are easy to get here, not like some of the other ingredients you use. Your muffins are gorgeous! Looks like enough for a whole meal. I love how the plums cook up and look so nice inside! Yummmm!!

Little Inbox : Don't worry & never give up, girl!

BHomemaker : Thanks so much! I love baking with plum. I think the plum flavour is quite unique.

Penny : Hahaha...and more work out too!

Lynd : These plums are not ripe thoroughly and the texture turn out just nice & soft. When you chew on them you can still taste the freshness fruity flavour in there. And for the soft ripe one, they turn out really really sweet after baking!

Hope you all have a fabulous time!

Cheers always,
Kristy
