Sweet Potato & Cardamom Ice Cream

I just can't wait to make some homemade ice-cream because of the heaty wave over here. You won't even believe it if I tell you that I am sweaty wet from morning till night for almost two weeks time now! Hopefully, I lost a few pounds! hehe... Ice-cream sounds great but I don't have an ice-cream maker! SO WHAT!? I can still make some ice-cream without the machine! I actually have a very interesting ice-cream recipe to show you today, which I think I've never seen this flavour at any ice-cream counter so far. Have any of you tried this flavour before??? Hopefully, it turns out great! And here we go.

Ingredients :

400gm mashed sweet potatoes/kumara
500ml milk
1/4 cup brown sugar
1-1/2 tspn ground cardamom
400gm sweetened condensed milk
300ml thickened cream

Method :

- combine milk, cardamom and sugar in a sauce pot
- simmer the mixture untill sugar dissolved (without boiling), then leave to cool.
- blend mashed sweet potatoes & the milk mixture together untill smooth.
- stir in condensed milk and mix well.
- pour mixture to a lamington pan, freeze almost set.
- chop ice-cream roughly, beat with cream n a large bowl untill smooth.
- finally, pour mixture into loaf pan and freeze untill firm.
- and serve.


Oh..... I've difficulties taking these few shots! The ice-cream actually melts real fast due to the extreme warm room temperature. Hey, guess what? This ice-cream flavour is so refreshing and smooth. SEE... you can still make ice-cream without an ice-cream maker! Yahoooo..... SO ladies, just erase the ice-cream maker from your budget list! hehe.... I definitely will make some more but I'll try taro/yam next round. Enjoy and have fun!

Sounds interesting, never tried before. Would the 400g condensed milk too sweet? What type of of sweet potatoes are you using? I would like to try half of the recipe.

Anncoo : 400gm condensed milk just nice not too sweet! At first, I also thought the same thing. Surprisingly not at all! I'm using the indonesia red potatoes. Have fun!

I thought the same thing...what an interesting flavor combo for ice cream. I was able to pick up an ice cream maker very cheap, now I need to get making it. Do you have a good ginger ice cream recipe? I've been craving it! I might even try this one...Do your kids like it?

Can you send some of your heat our way? Here in Florida we aren't as cold as other parts of the country, but we have been below average temps for awhile now. This week is supposed to be back in the 70s F. Thank goodness!

Interesting combo. I've not made ice cream for the longest time as the young olds took turns with their cough. And I make my ice cream without the ice cream maker too, don't wish to add on another gadget in the house.

This really is an unusual recipe, but it is also interesting. The sweet potato and cardamom is a great combination. Now all I have to do is get up my nerve and give this a try.

Kristy, This looks wonderful. After the winter we've had a hot day being sweaty from morning till night actually sounds good to me! I love cardamom but never thought of using it in ice cream. Brilliant!

ps:pour ma recette les mesures que j'utilise sont:
1 décilitre (dl) = 100 ml = 100 g = 1/2 cup
15 centilitres ( cl) = 150 ml = 150g = 3/4 cup

Whoever lives with you are probably some of the luckiest people ever in this world -- this ice cream flavor sounds absolutely INSANE...INSANELY GOOD!!!! Oh Kristy why do you torture me??? If I had an icecream maker I would whip up a batch and then demolish it because I have absolutely no self control when it comes to ice cream....maybe it's better this way hahaha!

Very nice! I do like the sweet potato/cardamom combination--ginger and orange is very good, too. Who knew that sweet potatoes made such a good ice cream?
