Five Spice Baked Stuffed Chicken

We are having bake chicken...five spice bake chicken. A very aromatic, soft and tender chicken! Of coz, not to waste any energy I stuffed in the potatoes, carrots, onion and star anise for extra fragrance. Everything cook in just one pot! Nice, clean and easy! I'll get the rice ready...

Ingredients :

one whole chicken
a few potatoes, quartered
carrots, cut in medium size
one onion, quartered
a few whole garlics, peeled
3 star anise

Seasonings :

2 tbsp five spice powder
1 tbsp salt
some ground pepper


Method :

- combine all seasoning together and mix well.
- marinade chicken inner & outer with the seasoning mixture.
- stuff in potatoes, onion, carrot, garlic and star anise.
- wrap with a sheet of aluminium foil.
- leave aside for 30-60 mins.
- then bake for 1 hour under 210'c then15mins for 170'c.
- serve hot.

Just look at those juicy gravy! This is the original chicken stock! You can add a little chicken broth before cooking but I preferred to go without it. I want the ori-flavour of the chicken :)

The meat is absolutely tender and yummy! What about those potatoes & carrots...hm..hm..!
