Lychee Mousse Pie

I think it's time to have something nice after a few days of vegetarian.....he he! Something smoo...th to melt in your mouth. I'm going to use lychee in my today's recipe. I've never try lychee in any pastry or cake or pie before. I guess this is quite a challenging task! I kept on thinking was it going to work with this pie??? NO answer except untill I take a bite of it!!!

Ingredients for Pie Crust :
200gm all purpose flour
120gm butter
1 egg, beaten
30gm sugar

Method :
- combine all ingredients together to form a dough.
- wrap dough with plastic sheet and chill for 2 hours.
- roll out flat in round shape and place into the pie baking tray.
- then bake for 5-8mins at 200'c.
- leave aside to cool.
Ingredients for Mousse Filling:
200ml whip cream
80ml lychee juice(use juice direct from can)
5gm gelatine

Method :
- combine gelatine with lychee juice warm over low heat untill the gelatine totally dissolved.
- remove the mixture from heat and cool off over a pot of cold water.
- whipped cream untill fluffy and add in the juice mixture.
- stir well untill combine.
- then spread the mousse cream over the pie crust.
- and chill for 2 hours.
- decorate the pie with the topping ingredients or as desire.

Topping :
3/4 cup grated white chocolate
1/2 cup grated dark chocolate
1 can of lychee
Well, what do you think? This recipe is quite simple and hassle free. Not much baking need to be done except the crust!

If you want the mousse look cream like mine, use 100ml lychee juice instead of 80ml.
This is a very light flavour of dessert and no sugar is added in!
