Coconut & Fruits Jelly Mooncake
We are celebrating Mid-Autumn Festival/Mooncake Festival today. I have made some jelly mooncakes to bring along over to my in-law's place for the celebration. We had a wonderful reunion dinner with all the family members but something still missing! No one is playing with lanterns anymore! My kids are all grown up....They used to play but not anymore! How I missed those days watching them carrying their lanterns running around and crying for help when their lanterns caught in fire...ha ha ha! I was busy the whole morning preparing the festive food. Luckily, I managed to make these last night. Simple recipes, yet still very tasty. Hope you will like them too!
Ingredients for Dragon Fruit Jelly Mooncake :
For Skin :
1-3/4 cup water
3 tbsp sugar
3 tspn agar-agar powder
5 tbsp dragon fruits puree
For Filling :
1/2 cup fresh milk
1/2 cup evaporated milk
2 tbsp sugar
1 tspn agar-agar powder
Ingredients for Dragon Fruit Jelly Mooncake :
For Skin :
1-3/4 cup water
3 tbsp sugar
3 tspn agar-agar powder

1/2 cup fresh milk
1/2 cup evaporated milk

1 cup thick coconut milk
3/4 cup water
2-1/2 tspn agar-agar powder
3 tbsp sugar
For Filling :
2/3 cup fresh milk
2 tbsp sugar
1 tspn agar-agar powder
1/3 cup water + 2 tspn mocha powder(green tea powder)
Ingredients for Mango Jelly Mooncake :
For Skin :
1-3/4 cup water
3 tspn agar-agar powder
3 tbsp sugar
5 tbsp mango puree
For Filling :
1/2 cup fresh milk
1 tbsp sugar
1/4 cup fresh milk + 3 tbsp mango concerntrate liquid
1 tspn agar-agar powder
