Cream Cheese Blueberry Bread
Bread always my family favourite. And I loveee making it too! I wonder do people serve bread on tea party or potluck ! The typical kind of Chinese do not serve bread on the dinning table especially the elderly. It's the tradition to serve perfect food on the dinning table for example all kinds of meat, seafood, soup, rice and veggies. But for the younger generations, who cares about that! As long as it is food and you can eat when you're hungry...that will do! Even me, myself and the kids are the same. We take anything....he he! But NOT my hubby! He is the typical kind.
*some blueberry jam
- brush on egg glaze and bake for 20-25 mins at 190'c.
- leave to cool.
Spread cream cheese frosting over the bread once it's cool....yum!
Ingredients :
550gm high protein flour
1 tspn yeast
200ml warm milk
2 eggs
2-1/2 tbsp sugar
2-1/2 tbsp corn oil
1/4 tspn salt
1 tbsp blueberry extract
*some blueberry jam
Method :
- combine yeast and milk together, leave aside for 5 mins.
- stir in all the remaining ingredients to form a soft dough.
- proof for 60 mins.
- place dough onto a slightly floured working table.
- punch the dough to release the air and slightly knead the dough for 1-2 mins.
- divide into 12 portion.
- roll flat into oval shape and spread on the blueberry jam.
- seal the edge and roll up like Swiss roll.
- place onto a cupcake paper cup and proof for 15 mins.- combine yeast and milk together, leave aside for 5 mins.
- stir in all the remaining ingredients to form a soft dough.
- proof for 60 mins.

I love blueberries jam in my bread. Looks really good especially with extra flavour for the topping! BUT some people can bake even better....they can actually came out something funny and really really creative for example the 'P' bread!!! ha ha ha.....I think you know what I mean! Remember the last savory bread recipe I've made....the one with ham and cheese in the middle. They all think of something else...you see...ha ha ha ! OMG... :D But we had fun, right? Cheers!
