Jeannie : I think you've over beaten the mixture and causing the combination unable to separate into 2 different layers.
Or maybe the eggs you used are less liquidity.
You can actually see 2 different layers of mixture after final fermentation. Light bubbles mixture on top & dark and watery mixture at bottom.
Or you can reduce the starter dough to 230gm instead of using the whole batch.
Hopefully you'll have a success try!
